Tri-Color Salad

This colorful staple is a quick and easy way to accompany your lunch or dinner entrée, or add a protein and make it a beautiful lunch.  

Serves: 1
Prep time: 5 minutes

Ingredients:

  • 1 bag of arugula lettuce
  • 3 endives, chopped
  • 1 radicchio head lettuce,
  • chopped
  • 1 lemon
  • 1 avocado, sliced
  • ½ cup toasted pine nuts
  • 2 tbsp. olive oil
  • salt & pepper to taste

 

Preparation:

  1. Chop endive and radicchio and place in a bowl. Add in arugula.
  2. Drizzle lightly with olive oil, lemon, salt and pepper. Dressing lightly is the key to this salad.
  3. Gently fold in sliced avocado.
  4. Sprinkle toasted pine nuts on top and enjoy.
  5. Option to add a protein and make this a lunch salad.
