Sweet & Spicy Shakshuka

This rich one-skillet recipe of eggs baked in a tomato-red pepper sauce is versatile enough to work for any meal of the day. Enjoy it as a breakfast / brunch staple, or try it out as an eggs-for-dinner recipe. Our version adds spinach to the traditional mix.

Serves: 3-6
Prep time: 30 minutes 
Cook time: 30 minutes

Ingredients:

  • 2 cups cherry tomatoes, whole
  • 2 red peppers, thinly sliced lengthwise
  • 2 shallots, thickly sliced
  • 4-8 eggs (add more for more servings)
  • 1/2 cup capers with brine
  • 1/2 cup chopped & pitted green olives
  • 1/4 cup dill, chopped
  • 1/4 cup basil, chopped
  • 2 cups spinach
  • 2 tbsp. tomato paste
  • 1 ½ tsp garlic powder
  • 1 tsp paprika
  • 1 tbsp. zatar spice
  • ½ tsp chili flakes
  • 3 tbsp. olive oil salt/pepper to taste

Toppers

  • 1 sliced avocado, ½ cup chopped cilantro, and ½ arugula lettuce, ½ cup capers, ¼ of a red onion- thinly sliced, handful of pine nuts, salt/pepper to taste

Preparation:

  1. In a hot pan with olive oil, add in tomatoes whole, chopped peppers & chopped shallots. Season with salt & pepper.
  2. Cook until tomatoes are blistered & shallots are browned. Smash tomatoes with a spatula so the juices are released.
  3. Add tomato paste to thicken, cook & stir for 2 minutes longer. Mix in chopped olives, capers, spinach, and herbs and seasoning.
  4. With your spatula, smash the tomatoes so the liquid is released. Let the sauce cook for another 10 minutes until thickened.
  5. Make space for each egg prior to cracking on the pan, so that the egg hits the actual pan directly. Crack all the eggs and cook for about 6-7 minutes. You can cover for 2 minutes to cook the eggs faster. I like my eggs not fully cooked and a little runny, but you can cook to your liking. Remove from the pan when cooked and sprinkle all the toppers, and serve in the pan!
