Simple Tuna Salad

A delicious and easy option for a healthy lunch in under 10 minutes.  This meal offers the right combination of protein, carbs, and healthy fats (from olives and pine nuts) to keep you full until dinner.   

Serves: 1
Prep time: 5 minutes
Cook time: 6 minutes

Ingredients:
Mixed greens
Kalamata or Green olives
Tomatoes
2 eggs
Pine nuts
Tuna, in oil (I like Tonnino)
Anchovies (optional)
Dijon mustard
1 lemon

Preparation:

  1. Set 2 eggs in boiling water for 6 minutes.
  2. Combine tomatoes, olives, over mixed greens in a salad bowl.
  3. Add tuna, and anchovies (if desired).
  4. In a small bowl, mix 1 tbsp. of Dijon mustard with the juice of 1 lemon (remove seeds).
  5. Slice eggs, add dressing and serve.
