Cauliflower Rice

This simple side is RESET approved and a great substitute for regular rice, or starchy sides like potato's.  This 1-pan recipe makes cooking a healthy meal after work quick and easy.  

 

Serves: 2-4
Prep time: 5 minutes
Cook time: 5 minutes

 

Ingredients:

  • 1 head of cauliflower

Preparation:

  1. Wash and thoroughly dry cauliflower, and remove all greens.
  2. Cut into small pieces and use a blender on pulse setting to grate the cauliflower into “rice.” sized pieces. Careful not to overdo it - we don't want mush.
  3. Once you have your cauliflower rice, sauté in a large skillet over medium heat in 1 tbsp. olive oil. Cover with a lid so the cauliflower steams to become tender.
  4. Cook for a total of 5-8 minutes, then season as desired (such as with chili powder or salt and pepper).
  5. Use cauliflower rice in recipes that call for rice.
